Fresh oyster shrooms

    We cut down a maple tree 2 years ago in my back yard that was dying. At that time it was producing oysters so decided to save 2 foot sections on the edge of the woods behind my house. The logs have produced 6 flushes of oysters since then. Picked this bunch yesterday before the freezing temps. Sorry my pic won't load.

    Sorry for delay on the pic. Had to purchase an app that allowed me to resize the file. My granddaughter and I went back yesterday afternoon to pick all of the babies (fingernail to ear size). Sautéed in garlic the past 3 nights and have 1 more big batch to prepare this weekend. Cool winter surprise!

    Probably the most prime condition I've ever picked. They had just popped and there were dozens of tiny 1/4 inch oysters that I left that froze last night. I thought about bringing the logs into the garage to allow them to grow but it was going to be too much work!

    The current weather is ideal for producing some winter oysters. They're also very easy to see this time of year. These logs have produced in Dec/Jan the past 2 years.

    2nd winter flush from same logs just started yesterday. Lighter colored are fresh and darker ones were the small ones that froze last week. Will let these grow for a couple of days.

    Several recipes on the internet. I like to sautée the oyster mushrooms in butter with a little chopped garlic, salt & pepper until edges start to get a little crisp. Threw some in a venison stew this week also.
