FWIW my mothers old recipe just used water . I have not tried it that way . I think if you want the biggest chocolate load /taste that the coffee is what would take it up there.

My mothers would be good with water ( she was a excellent and innovative cook) but maybe not the overwhelming chocolate taste of Barneys using the Extra Dark Coco coupled with coffee.

I used 2 runs of this for my double recipe chocolate cobbler. I've seen recipes that called for expresso powder or instant coffee in the batter as well as using coffee for the hot liquid. There's also recipes without any coffee, and using hot water as the liquid. In my opinion, the dark cocoa is where it's at!

Mom called it red devil float.
No idea why. This one has nuts and baking powder but she was using regular flour. But used only water
