When the state inspector checked out the hvac on my mother’s new build a couple years ago the range hood exhaust was part of it. Pissed me off actually, I was gonna rig it up myself.
I not sure venting a range hood is even required except for a commercial range? It wasn't a few years back anyway.

Most homeowners cant swing a hammer let alone run the duct work and an exhaust pipe through thier roof.
Depending on location It costs 3-4 times as much (and a PITA) to do it after the fact. It’s a BS builder short cut. Who wants to wipe grease off their ceilings every few weeks? I’ll add failing to install bathroom fans if there happens to be a window too, but that one bugs me far less.
Just depends on the layout. Some people choose not to pay for the expense. Any time the range top is on an exterior wall, I pretty much demand venting out the ban board or end joist. It’s super easy. The cabinets I normally provide have a very compatible “hood cover” with the unit listed below. Basically, You locate framing. Provide electric. Determine the best location for vent. Drill a long pilot hole through the framing, sheathing, and brick….then meticulously remove the brick. Install the flexible pipe and termination fitting. I don’t understand the hesitation.

We use this unit mostly. It’s good.

When you exceed 400cfm, you need to consider bringing in “fresh air.”

“This is a hidden hazard,” Richard Trumka Jr., an agency commissioner, said in an interview.

Just have to be gentle and patient. It’s not hard. I like to use a grinder to etch the circle as best I can. Then I carefully drill a series of 1/4” holes damn near as close together as I can. Articulate the drill on an angle and remove as much material as possible. Then use a chipping hammer/hammer and chisel to clean it up. Then cut the sheathing with a long sawzall blade.

My stove hood is not vented. I had no idea about it until now. However, I fixed it immediately when I moved in. The fan sounded like a jet engine so I put another air filter on top of it and weighted it down. Ceiling has been clean for 12 years

What’s next farting
Hvac should have a fart mode to rapidly clear a room. That would sell well lol.
