What is the pro's and con's of leaving the hide on and taking it off.

Taking hide off is easy when warm. Leaving hide on the meat doesn't dry out as much

What is the pro's and con's of leaving the hide on and taking it off.

Pros. It cools off quicker

Cons. It gets dirty
It dries out.
