What are you all using? Brand/wattage?

Been shopping around in the 250-500w range. Something I can recharge with a foldable 60w solar panel. Run the basics around camp when a generator isn't practical.

Yeah they're not very practical for making coffee...but you can do that with a camp fire. Being able to recharge phones, AA/AAA batteries, lights, etc make them pretty handy on a multi day trip. Sure a 2000w one would be nice but I'd rather have one I can charge 80%-100% every day with a lightweight solar panel. Seems much more efficient at least imo.

When it comes to equipment and technology, I believe that cheap gear that breaks too quickly is a waste of money. If money is limited, wait and save instead of buying on credit, which might turn an inexpensive item into something not so cheap.
Things like that frequently get less expensive over time. If you are not intending to utilize it right away, wait for a deal.
That being said, I have a Bluetti AC200 all-in-one ($1200) with four 100-watt panels ($360) to power it. (Total available power is 1.7 KW). So far, so nice; I powered from this my massage chair, no issues with it.
A secondary 'assembled' system with 2x55 AH deep cycle batteries, 1 x 100 Watt portable panel, Epever 40 Amp charge controller, and 1500 PMW inverter is also included.
The secondary system cost around $600 when all components, wiring, fuses, and so on were included.
So far, it's also working great. Both are 5-7 months old, so I'm not sure how they'll fare in the long run.

Basically buy the upgrade the first time. It saves you money in the long run. I learned this a long time ago.

I do not own one but a friend owns a Jackary that I have used on multiple occasions to run ham radios in the field. That thing is awesome. We set up solar panels for it two weeks ago and it quickly charges. I don’t own anything like that myself however. When I am backpacking I just take small solar panels and battery packs and recharge them during the day to charge my phone etc. at night
